Recent Dinner Obsession: Small Plate Dinners
Because who doesn't love small-plates to go with your late summer bbq? Featuring: A double hummus recipe!
This summer has been all about weddings, heat waves and fresh dinners that require minimal time over the stove or can be done outside on the bbq.
It has resulted in multiple fresh, small plates-based dinners that go perfectly with some bbq chicken/halloumi/meat and a cold beer. So I figured, why not share one of my favourites on here?
None other than this glorious combination of juicy bbq’d chicken breast (courtesy of my husband: "the master chicken bbq’er”), paired with:
Fresh cucumber ribbons
Olives
Roasted potatoes and tomatoes (on the bbq of course)
Hummus two ways: plain and roasted red pepper
It sounds like a lot, but it really is quite simple.
It is all about a few good ingredients, seasoning your chicken, potatoes and tomatoes, and putting them on the bbq to do their thing. Meanwhile you make the hummus - and I’ll give you the recipe for both version here.


I’m a creamy hummus girl so this hummus is super creamy and fluffy, just how I like it. It is not the chunky kind, but if you prefer that, then you can definitely blitz in some chickpeas at the end to chunkify it (or just blend it less, you know - whatever floats your boat).
But I like my hummus creamy and smooth, so that’s how I write the recipe. The good thing with hummus is that you can adjust and add whatever you like to get different variations. So for this i added roasted red peppers to half the batch (the good quality ones in a jar, but you can roast them yourself if you prefer!) and blended them in.

Exceptionally Creamy Hummus
INGREDIENTS
2 x 400g cans of chickpeas (+ half the chickpea liquid)
1/2 clove of garlic
1/2 tsp salt
2 tbs good quality tahini
2-3 tbs olive oil
A pinch of cumin *optional
Juice of 1/2 a lemon (more to taste)
HOW TO:
Add all the ingredients to a blender, including chickpea liquid from one of the cans. Blend until smooth and plate up in a nice bowl.
Top with some oil, chili and herb oil, spices or just keep it natural.
Dig in and enjoy!
I love to have mine with a lentil stew, or with some falafels and pita bread, or on toasted sourdough with good tomatoes and lots of salt and pepper 👌🏼❤️
